Green Chile Stew

- 2 lbs cubed pork
- 4 tbsps vegetable oil
- 4 medium ripe tomatoes
- 1 onion, chopped
- 2 lbs green chiles, cleaned and diced
- 2 cloves garlic
- handful of fresh cilantro
- 5 medium potatoes, peeled & diced
- 2 red chile pods, crushed & seeds removed
Brown meat in oil. Add meat & all ingredients except potatoes to a large heavy cooking pot. Add enough water to cover and simmer for 2 and a half hours (add more water if needed).
Add potatoes and continue to simmer until meat and potatoes are tender (about 45 minutes).
